With the aim of promoting Arequipa's traditional cuisine, over 100 local restaurants, known as picanterias, street food vendors, and gastronomy schools will participate. Festi Sabores takes place Nov. 4-7 at Cerro Juli fairground.

The festival will also feature dance and musical performances, seminars, food contests and other cuisine-related activities.

The event's organizers have invited restaurant owners and chefs from Chile and Bolivia to participate in the event. "The idea is that they could then promote the quality of Arequipa's cuisine in their respective countries," said Eguiluz.

The festival will be presenting a variety of dishes such as rocoto relleno (stuffed rocoto peppers), chupe de camarones (shrimp chowder), chicharrones (fried pork rinds), and lechón al horno (roasted pork), among others. Prices range from 3 to 12 soles.
